Follow The Directions

01

Step
2 mins

In the bowl of a stand mixer fitted with the paddle attachment, combine 2 cups of flour, sugar, yeast, and salt.

02

Step
2 mins

In a saucepan over low heat, combine water, milk, and butter. Heat until warm and the butter is melted. Gradually pour the warm liquid into the flour mixture, beating at medium speed until fully combined, about 2 minutes. Add the remaining flour and continue mixing until a soft dough forms.

03

Step
1 hrs

Switch to the dough hook and knead until smooth and elastic, 5-6 minutes. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place until doubled in size, about 1 hour.

04

Step
5 mins

Punch down the dough and turn it out onto a lightly floured surface. Divide the dough in half; return one half to the bowl and cover. Roll the other half into a 12x16-inch rectangle. Whisk the eggs with a small amount of water to create an egg wash; brush some of the egg wash over the half of the rectangle farthest away from you.

05

Step
30 mins

Arrange 16 slices of provolone cheese in a single layer on the dough, leaving a 1-inch border on the edges. Place half of the pepperoni over the cheese. Starting at the edge closest to you, carefully roll up the dough. Brush the seams with egg wash and pinch them closed, using a little flour if needed. Place the loaf, seam-side down, on a large cookie sheet lined with parchment paper; cover. Repeat with the remaining dough, cheese, and pepperoni.

06

Step
30 mins

Let the loaves rest, covered, for 30 minutes.

07

Step
0 mins

Preheat the oven to 350 degrees F (175 degrees C). Uncover the loaves and brush the remaining egg wash over the entire surface of both loaves.

08

Step
35 mins

Bake in the preheated oven, rotating the pans halfway through, until golden brown, about 30-35 minutes. Let cool for 15-20 minutes before slicing and serving warm.

For a richer flavor, use a high-quality provolone cheese.
Add a sprinkle of Italian seasoning to the egg wash for extra flavor and aroma.
Serve with a side of warm marinara sauce for dipping.
This bread freezes beautifully. Wrap tightly in plastic wrap and then foil before freezing.
