Continue roasting for approximately 2 hours more, or until an instant-read thermometer inserted into the center of the pork registers at least 145 degrees F (63 degrees C). Check the sauerkraut mixture periodically, adding more water as needed to prevent it from drying out.

Once cooked, remove the roasting pan from the oven and allow the pork to rest for about 10 minutes in a warm place before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful roast.

For an even richer flavor, consider searing the pork roast in a hot skillet before placing it in the roasting pan. This adds a beautiful crust and deepens the overall taste.
Adjust the amount of sauerkraut to your liking. If you prefer a less tangy flavor, rinse it thoroughly before adding it to the mixture.
Serve with creamy mashed potatoes or dumplings to soak up the delicious pan juices. A dollop of sour cream or a sprinkle of fresh parsley makes for a lovely finishing touch.
