Arrange watermelon cubes in a single layer on a baking sheet. Freeze until solid, ideally overnight (at least 5 hours).

Zest limes; reserve zest for garnish. Juice limes until you have 2 tablespoons of fresh juice.

Working in batches, place half of the frozen watermelon cubes in a food processor along with 1 tablespoon of honey and 1 tablespoon of lime juice. Blend until the mixture is completely smooth and creamy. Transfer to a large bowl. Repeat with the remaining watermelon, honey, and lime juice. (5-10 minutes per batch)

Gently combine the two batches in the bowl. Serve immediately, garnished with the reserved lime zest and a sprinkle of Tajin®. For a firmer texture, transfer the sorbet to a freezer-safe container and freeze for an additional 1-2 hours.

For an extra layer of flavor, consider adding a few fresh mint leaves to the food processor during blending.
If you don't have chili-lime seasoning, a pinch of salt and a dash of cayenne pepper can serve as a substitute.
Adjust the amount of honey to your liking, depending on the sweetness of your watermelon.
For a boozy twist, add a tablespoon of vodka or white rum to the food processor during blending. This will also help to prevent the sorbet from freezing too hard.
