For a tangier sourdough, extend the first rise in the refrigerator for up to 24 hours. If your starter is not very active, you may need to increase the amount of starter used or extend the rising time. To achieve a crisper crust, spray the loaves with water before placing them in the oven, and then again halfway through baking. Store cooled sourdough bread in a breadbox or loosely wrapped in plastic wrap at room temperature for up to 3 days.
