In a large saucepan, combine the fresh cranberries, sugar, and water. Bring the mixture to a boil over medium-high heat. (5 minutes)

Once boiling, reduce the heat to medium and continue to cook until the cranberries have burst, approximately 8 to 10 minutes.

Stir in the finely chopped celery, diced Granny Smith apple, grated orange zest, fresh orange juice, golden raisins, chopped pecans, ground ginger, ground cloves, and a pinch of salt. (2 minutes)

Continue cooking, stirring frequently, until the celery is tender and the chutney has thickened to your desired consistency, about 30 to 35 minutes.

Remove the saucepan from the heat, cover, and allow the chutney to stand and thicken further for approximately 15 minutes.

For a smoother chutney, you can use an immersion blender to slightly puree the mixture after cooking. Be careful not to over-blend, as you still want some texture.
The chutney can be stored in airtight containers in the refrigerator for up to 2 weeks. It also freezes well for longer storage.
Experiment with different types of nuts, such as walnuts or almonds, for a variation in flavor and texture.
Adjust the amount of sugar to your preference, depending on the tartness of the cranberries and apples.
