In a large mixing bowl, whisk together the sweetened condensed milk and egg yolks until well combined. (2 minutes)

Refrigerate for at least 5 hours, or preferably overnight, to allow the pie to fully set. (300 minutes)

For a smoother filling, use a stand mixer or hand mixer instead of whisking by hand.
If you can't find Key limes, Persian limes will work in a pinch, but the flavor will be slightly different.
To prevent the graham cracker crust from getting soggy, brush it with melted butter before adding the filling and blind bake for 8 minutes at 350F.
Garnish with whipped cream and lime zest for an elegant presentation.
