Feel free to experiment with different vegetables based on what you have on hand or what's in season. Zucchini, mushrooms, or eggplant would all be excellent additions.
For a smoother sauce, blend it thoroughly. If you prefer a chunkier sauce, blend it only partially.
This sauce freezes beautifully! Store it in airtight containers or freezer bags for up to 3 months.
Adjust the seasoning to your liking. Taste and add more salt, pepper, or oregano as needed.
Consider adding a pinch of red pepper flakes for a touch of heat.
If you don't have red wine on hand, you can substitute an equal amount of vegetable broth or water.
