Step

Boil water in a large pot, add sweet potatoes, and cook until tender (20-30 minutes). Drain and mash until smooth.

Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.

In a bowl, stir together sugar and oil until well mixed. Beat in the banana. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, salt, and baking powder. Alternately stir the flour mixture and water into the sugar mixture until just combined. Mix in the mashed sweet potatoes and pecans. Stir until the batter is smooth. (5 minutes)

Pour batter into the prepared loaf pan. (2 minutes)

Bake in the preheated oven until the top is golden brown, approximately 1 hour. Check with a toothpick for doneness.

For an extra layer of flavor, try adding a teaspoon of vanilla extract to the wet ingredients.
To prevent the top from browning too quickly, tent the loaf with foil during the last 20 minutes of baking.
This bread freezes beautifully! Wrap tightly in plastic wrap and foil after cooling completely.
Feel free to substitute walnuts for pecans, or omit the nuts altogether.
