Prepare the stuffing mixture: In a large bowl, combine apple wedges, onion wedges, garlic cloves, and celery. Sprinkle with poultry seasoning and toss to coat evenly. (10 minutes)

Stuff and secure the turkey: Stuff the body and neck cavities with the apple mixture. Tuck the wing tips into the slits beneath the wings, and insert the legs into the slits near the tail to secure them. (10 minutes)

Place turkey onto a rack set in a roasting pan. Distribute the chilled butter pieces evenly under the loosened skin of the breast and thighs. (5 minutes)

Roast the turkey in the preheated oven for approximately 3 1/2 hours, or until an instant-read thermometer inserted into the thickest part of the thigh (without touching bone) registers 160 degrees F (70 degrees C). Check for doneness after 3 hours. (210 minutes)

Remove the roasting pan from the oven and tent the turkey loosely with aluminum foil. Let the turkey rest for 40 minutes before carving to allow the juices to redistribute, resulting in a more tender and flavorful bird. (40 minutes)

For extra flavor, consider adding fresh herbs like thyme and rosemary to the apple mixture.
If the turkey skin starts to brown too quickly, tent it loosely with foil during the last hour of roasting.
Ensure the internal temperature reaches a safe 165 degrees F (74 degrees C) after resting.
Carve the entire turkey and save the bones, joints, tail, wing tips, drippings, and reserved onion, garlic and celery (but NOT the skin) to make turkey soup. Mix the apple pieces into your dressing.
