For extra flavor, try adding a dash of hot sauce to the dipping sauce. Make sure your oil is at the correct temperature for optimal crispiness. Use a thermometer to monitor the oil. Don't overcrowd the fryer or pot. Fry the onion in batches if necessary. Adjust the amount of cayenne pepper to your preferred spice level. If you don't have a deep fryer, you can use a large, heavy-bottomed pot. Be extremely careful when working with hot oil. Be careful not to cut through the bottom of the onion, this is important to keep all the petals intact. The blanching step is optional, but it does help the petals separate more easily.
