For a richer flavor, consider searing the pork roast with a pat of butter in addition to the vegetable oil. If you prefer a thicker sauce, remove the roast and vegetables from the slow cooker after cooking. Then, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir the slurry into the slow cooker liquid and cook on high for 10-15 minutes, or until thickened. Feel free to add other vegetables to the slow cooker, such as carrots, parsnips, or celery.
