Recipe View 5 mins Create a Simple Syrup (5 minutes): In a medium saucepan, combine the water and sugar. Heat over medium-high heat, stirring occasionally, until the sugar is completely dissolved and the mixture is clear. Remove from heat and allow to cool completely.

Recipe View 3 mins Prepare the Watermelon Base (3 minutes): Place the cubed watermelon in a blender or food processor. Blend until completely smooth. Strain the puree through a fine-mesh sieve to remove any seeds or fibrous bits for an extra smooth sorbet.

Recipe View 2 hrs 5 mins Combine and Chill (5 minutes + 2 hours chilling): In a large bowl, whisk together the cooled simple syrup, strained watermelon puree, and fresh lime juice. Cover the bowl tightly with plastic wrap, pressing the plastic directly onto the surface of the mixture to prevent ice crystals from forming. Chill in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld and the mixture to become thoroughly cold.

04 Step

Recipe View 2 hrs 20 mins Churn and Freeze (20-30 minutes + 2 hours minimum): Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer's instructions until it reaches a soft-serve consistency. This usually takes between 20-30 minutes, depending on your machine. Transfer the sorbet to a lidded container. Cover the surface with plastic wrap, pressing it down gently, before sealing with the lid. Freeze for at least 2 hours, or preferably overnight, to allow the sorbet to ripen and firm up to a scoopable consistency.

For a more intense watermelon flavor, use a high-quality, very ripe watermelon.
Adjust the amount of lime juice to your preference. Start with 1/4 cup and add more to taste.
If you don't have an ice cream maker, you can still make this sorbet! Pour the chilled mixture into a shallow freezer-safe dish and freeze for 2-3 hours, stirring every 30 minutes to break up ice crystals. This will result in a slightly icier texture, but still delicious.
To easily juice your limes, roll them firmly on the counter before cutting and squeezing.

I didn't have an ice cream maker, but the 'no-churn' method worked great! It was a bit icier, but still delicious.
