Pour the undrained peaches into the center of the batter; once again, do not stir. Sprinkle the top with additional cinnamon. (2 minutes)

Bake in the preheated oven until golden brown and bubbly, about 30 to 60 minutes. Cooking time will vary depending on the moisture content of the peaches and your oven. (30-60 minutes)

For an extra layer of flavor, try adding a splash of almond extract to the batter.
Serve warm with a generous scoop of vanilla ice cream or a dollop of freshly whipped cream.
If you don't have self-rising flour, you can make your own by whisking together 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
Monitor the cake closely during the last 15 minutes of baking to prevent over-browning. If the top is browning too quickly, tent it loosely with foil.
