Rest the Roast and Prepare for Yorkshire Puddings (20 minutes): Once the roast is cooked to your liking, remove it from the roasting pan, cover it loosely with aluminum foil, and let it rest in a warm place. This allows the juices to redistribute, resulting in a more tender and flavorful roast. Meanwhile, carefully measure out ½ cup of the rendered beef fat from the roasting pan and divide it evenly among 12 muffin tins. Reserve the roasting pan with the remaining drippings for the au jus. Preheat Muffin Tins (10 minutes): Place the grease-filled muffin tins into the oven and increase the oven temperature to 425 degrees F (220 degrees C). Let the muffin tins preheat for 10 minutes, ensuring they are hot when the batter is added.
