In a large saucepan, combine the collard greens, chopped onion, and salt pork. Cover with water and cook over medium heat until the greens are tender (approximately 15-20 minutes). Drain the mixture, discard the salt pork, and set aside the cooked greens and onions.

Lightly coat a nonstick skillet with cooking spray. Heat the skillet over medium-high heat, then add the egg whites. Season with salt and pepper to taste. Scramble the egg whites, stirring constantly, until they are cooked to your liking.

Coat another nonstick skillet with cooking spray and heat over medium-high heat. Sauté the Canadian bacon slices on both sides until lightly browned. Remove from the skillet and drain on paper towels.

To assemble the stacks: Place the toasted bread slices on a broiler pan. Top each slice with one piece of Canadian bacon, followed by equal portions of the cooked collard greens and onions, scrambled egg whites, and shredded Cheddar cheese. Broil until the cheese is melted and bubbly. Garnish with chopped fresh chives and serve immediately.

For an extra kick, add a dash of hot pepper sauce before serving.
Ensure the collard greens are thoroughly drained to prevent a soggy stack.
Feel free to substitute the Cheddar cheese with your favorite variety, such as Gruyere or Monterey Jack.
If you prefer a vegetarian option, consider replacing the Canadian bacon with grilled halloumi cheese.
