Bring the mixture to a boil over medium heat, stirring constantly until the filling thickens, about 2 minutes. Remove from heat and stir in vanilla extract. Pour the blackberry filling into a 9x13-inch baking dish and set aside. (10 minutes)

In a large bowl, combine the crushed cornflakes, flour, rolled oats, 1/3 cup brown sugar, pumpkin pie spice, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add cold water, 1 tablespoon at a time, mixing until the crust just begins to hold together. (10 minutes)

Sprinkle the crumbly crust evenly over the blackberry filling. Drizzle the melted butter over the top of the crust. (2 minutes)

Bake in the preheated oven until the crust begins to brown, about 10 minutes. Then, broil the cobbler until the crust is a rich, golden brown, approximately 2 minutes more, keeping a close eye to prevent burning.

For an even richer flavor, consider browning the butter before melting it and drizzling over the crust.
If you don't have pumpkin pie spice, you can substitute with a blend of cinnamon, nutmeg, ginger, and cloves.
Feel free to experiment with other berries, such as raspberries or blueberries, or a mix of your favorites.
