Marinate in the refrigerator for at least 5 hours, or preferably overnight, to allow the flavors to fully penetrate the chicken. Reserve the remaining marinade in a sealed container in the refrigerator. (5 hours +)

Prepare the Grill: Preheat an outdoor grill for medium-high heat, and lightly oil the grate to prevent sticking. Place the soaked cedar plank on the grill and lightly brush it with olive oil. (10 minutes)

Grill the Chicken: Remove the chicken breasts from the marinade, allowing any excess to drip off. Discard the used marinade. Once the cedar plank begins to smoke and char slightly, place the marinated chicken breasts on the plank. Cook the chicken for approximately 10 minutes per side, or until they are no longer pink in the center and the juices run clear when pierced with a fork. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). During the last few minutes of cooking, brush the chicken with the reserved marinade to add a final layer of flavor and a beautiful glaze. (20 minutes)
